THE FILET PINK PEPPER & LEMON: Tomato-spinach sauce

Ingredients

- 1x THE FILET PINK PEPPER & LEMON
- Olive oil for frying
- Red onion
- Tomatoes
- Lemon juice
- Vegan cream
- Thyme
- Salt, Pepper
- Fresh spinach
- Cooked rice

Preparation

1️⃣Sear THE FILET in a pan with a little olive oil until golden and crispy. Then set it aside.
2️⃣Halve the cherry tomatoes and finely chop the onion. Add both to the same pan and sautΓ© until the tomatoes soften and become saucy.
3️⃣Stir in a splash of vegan cream, a pinch of salt and pepper, and some fresh thyme. Finally, add the spinach and let everything simmer for a few more minutes.
4️⃣Serve the cooked rice topped with the tomato-spinach sauce and finish with THE FILET on top. Enjoy!
